About the Program

Each week you will spend time in the on-site nano-brewery, distillery and rectification laboratory, carrying out experimental work on raw materials, malting processes and waste reduction. Lectures and tutorials introduce theory, while industry-facing workshops and guest talks link the concepts to real business cases. The semester ends with a research project, either lab-based or desk-based, where you develop and test a sustainable solution for the beverage sector.

The programme examines how sustainability criteria apply to brewing and distilling, addressing questions of resource efficiency, carbon footprints and circular use of by-products. It situates these issues within the wider context of food and beverage manufacturing and renewable energy economics. It is intended for graduates in science or engineering, or professionals with substantial experience in malt, brewing or distilling, who wish to deepen their expertise and move into roles that shape sustainable practice in the industry.
