Students at NMBU's Ås campus, 17 minutes by train from Oslo, study at Matpiloten, Norway's sole research factory for food. This programme develops student understanding of food's chemical building blocks, how it is processed, and how it impacts health, the environment, and climate. Students study topics such as processing of raw materials, equipment use, consumer behaviour, packaging technology, hygiene, quality measurement, nutrition chemistry, and microbiology, and spend extensive time in lab work, including Matpiloten.

Students can explore topics such as fermentation, sourdough, and different grain varieties, working on real research projects. The curriculum includes three specialisations: 1) Produksjon og utvikling av næringsmidler; 2) Matvaretrygghet, -kvalitet og -hygiene; and 3) Ernæring, biomedisin og helse.
